1 lb ground beef
1 diced yellow onion
bag of frozen vegetables
2 tbsp flour
1 cup beef broth
2 tsp thyme
1 tbsp tomato paste
Salt and pepper to taste
3 cups mash potatoes
1/4 cup parmesan cheese
In a cast iron skillet cook ground beef.
Preheat grill to 350 degrees.
Once cooked, add the onion, garlic, mixed vegetables, until the vegetables are softened.
Stir in flour and cook for 2 minutes.
Add broth, stir until the mixture thickens. Then add thyme and tomato paste. Simmer for 10 minutes.
Turn off heat. Top with mash potatoes, spreading evenly.
Add salt and pepper, then parmesan cheese.
Place on grill for 30-40 minutes or until mash potatoes are crispy on top.
Serve and enjoy!
