1 pounds ground beef

½ tablespoon Dijon mustard

1 ½ tablespoons olive oil

½ teaspoon thyme

1 ½ teaspoons chopped garlic

½ teaspoon kosher salt

½ teaspoon freshly ground black pepper

6 slices Gruyere

6 small Brioche buns

2 ounces baby arugula

1 medium tomatoes, sliced

1 small red onions, sliced

Chipotle Mayo:

½ cup mayo

1 tablespoon water

1 -2 teaspoons lime juice

⅛ teaspoon salt, more to taste

½ teaspoon chili powder

1 teaspoon smoked paprika


  1. Place the ground beef in a large bowl and add the mustard, olive oil, thyme, garlic, salt, and pepper. Mix gently with a fork to combine. Shape the meat into 6 patties of equal size and thickness.

  2. When the grill is medium-hot place the sliders on the grill and cook for 5 minutes. Turn the sliders over with a spatula and cook for another 5 minutes. For the last 2 minutes of cooking time, place slice of Gruyere on the top of each burger and close the grill lid. Remove the sliders to a platter and cover with foil.

  3. Mix together all ingredients for chipotle mayo until smooth.

  4. Slice the buns in half crosswise and toast the halves cut side down on the grill.

  5. On bottom bun, put a some chipotle mayo, baby arugula, and tomato slice. Then place the burger, onion, and more chipotle mayo. Serve.
