1 lb. medium scallops
1 tbsp salt
1 tbsp black pepper
1 tbsp olive oil
1 tbsp chopped shallots
1 tsp crushed red pepper flakes
Lemon wedges, for serving
Combine salt, pepper, red pepper flakes, shallots, and olive oil in a large bowl.
Add scallops to bowl and mix well so all scallops are seasoned.
Heat grill to medium-high.
Place cast iron skillet on grill to heat. Add olive oil
Place scallops on cast iron skillet. Grill about 3-4 minutes a side, or unit opaque.
Serve in cast iron skillet to keep warm.
